Chef John verses the Garbage Plate

Before I left New York, as promised, I experienced the legendary Garbage Plate. My biggest fear with this post is that someone visiting my blog for the first time, possibly during their lunch break, sees the photo on the left, loses said lunch, and never returns.

Anyway, that’s just a chance I’ll have to take. The first thing I’d like to say about the Garbage Plate is that it actually tasted way better than it looked. I know what you’re thinking… how could it not? The culinary logic behind the dish is pretty solid. If you like pasta salad, homefries, hot dogs, and chili, then you certainly will enjoy them in huge quantities all piled on top of each other.

I didn’t make it to the home of the original Garbage Plate, Nick Tahou’s in Rochester. I decided to try mine at a trusted lunch spot in Canadaigua, called Charlie Riedel’s. I have been coming to Charlie’s for years. They serve some of the best burgers around, and their fish sandwich (a huge, perfectly fried piece of haddock on a soft roll), is the best I’ve had anywhere. But, in all my visits to Charlie’s I had never tried a Garbage Plate. By the way, as you’ll see and hear in the video clip, they don’t call it a Garbage Plate.

I was going to give you the entire history of the Garbage Plate here, but then I found an old FoodTV clip on the subject, so I’m posting that below mine. There’s not much else to say, except that I hope you enjoy the clip. I’d like to thank the staff at Charlie’s, which could not have been nicer. Thanks Barb, Jessie, Andy and Noah! There was also another girl working the counter, but I never got her name. So, whoever you were, thanks to you too. Also, to Scott the Manager (who wasn’t there that day), your loyal staff did charge me full price for the plate. They were not about to be bought merely for the promise of Internet fame. Enjoy!

This clip from FoodTV explains the history behind this bizarre dish

CRACKED WHEAT USILI – DIET SERIES 2

Rice usili is a classic dish prepared by my grandma for our lunch boxes when we were kids. I had completely forgotten about this until my mom reminded me of this when we were online. Rice or arisi usili is usually prepared with rice and any type of dhal. This dish is a combination between upma and pongal. The dhal will be still whole and gives a good texture to the whole dish. The seasonings used here are also very simple ones. I am not sure where this dish is from. When I asked my mom about this, even she was not sure about this. If anybody is familiar with arisi usili, please share your thoughts and memories in this post friends. I have followed my grandma’s exact recipe here except that I substituted the rice with cracked wheat.

Coming on to my recipe, I made a lighter version of this dish with cracked wheat. This was equally delicious and comforting as the original one. I had tried this for the first time last week when my hubby was away on a business trip. That day I had this meen kuzumbu. The next day, I had prepared kathrikai kothsu to go along with this and we had it for breakfast. My hubby loved this very much and in fact he had finished off the whole thing. I cooked the usili in rice cooker. Rice cooker cooking makes the usili very fluffy when compared to cooking in pressure cooker, so here is my next recipe in my diet series. This combination of lentils and whole grains is also awesome :)

INGREDIENTS:

1. Cracked wheat, 1 cup, (fine rava wont work so well here, I have used a little bit bigger variety, this can be substituted with bulgur wheat).

2. Toor dhal or moong dhal, ½ cup.

3. Whole pepper corns, ¼ teaspoon.

4. Cumin seeds, ½ teaspoon.

5. Red chilies, 1-2, can be left whole or broken.

6. Curry leaves, a sprig.

7. Salt as per taste.

PREPARATION:

Wash the lentils well and cook them until they are done half way through. The lentils should still be whole. I cooked mine in the microwave. I cooked the dhal for 15 minutes with just enough water to cover the lentils. When cooking the dhal in the microwave, add a drop of oil to prevent the water from boiling over. Drain the water from the dhal and add it the cracked wheat. Transfer the contents to an electric rice cooker, add ½ teaspoon of salt, and 2 cups of water and cook until they are done. The cracked wheat can also be cooked on stove top also under medium flame, stirring in between until it is dry. Heat a small pan with some oil. Add the seasonings one by one and fry for a few seconds until good smell emanates from them. Pour the seasonings over the usili and mix everything well. Serve hot with any side dish like sambar, kothsu, or chutney.

SANDRAS GRILLED COLA CHICKEN THIGHS with GRILLED CORN and COLESLAW

A superb barbecue option
that youll be making quite often,
as it is a great "All-American" meal after all...
Servings: (6 = 2 pieces each)
Prep: 5 mins. |
Marinate: 4 hrs. |
Stand: 30 mins. |
Grill: 20 to 25 mins.

Posted by Sandra

INGREDIENTS

1-1/2 cups of your favorite barbecue sauce (I prefer Bulls Eye-Original)
2 tablespoons minced dried onion
1 (12 oz. can) Coke-a-Cola
12 bone-in skinless chicken thighs (I generally remove the skin myself)

METHOD

Add the barbecue sauce, minced onion, and coke-a-cola to a large ziploc bag, and mix to combine. Add chicken thighs to the ziploc bag make sure all chicken pieces are evenly coated with sauce. Seal bag and place in refrigerator for 4 hours to marinate, while turning over occasionally. Take out of refrigerator and let chicken return to room temperature for 30 minutes prior to grilling.

Meanwhile, preheat grill during so you have charcoal off to one side, as you’ll be cooking chicken over indirect heat (where no charcoal is below it). Before placing chicken thighs on grill, oil rack with an oil-soaked folded paper towel using tongs.

Grill the chicken, covered, for 20 to 25 minutes (longer if using chicken breasts, as they are thicker), while turning and basting with sauce after 10 minutes, and then continue grilling, just until juices run clear when centers of the thickest pieces are cut next to the bone (they should read 170 degrees when done).  Toss marinade.  Remove grilled chicken to serving platter and tent for 5 minutes before serving. - Enjoy!

Tip:  I like to serve this meal with my other recipes of  Cajun Grilled Corn and Sandras Coleslaw as shown in the photograph above.

CHERRY ALMOND COFFEE CAKE

A lot of us have company over the holidays and it is always nice to having something tasty to serve with coffee or tea. This recipe is not only pretty, but would be wonderful for company of all ages.  Picky-picky hubby loves cherry, so I made this with cherry pie filling, but ANY pie filling would work well.

This cake is moist, rich and "holiday perfect" !!

2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup butter room temperature
½ cup sliced almonds
1 cup sugar
2 eggs
1 teaspoon vanilla
½ teaspoon almond extract
1 cup sour cream
1 (14 oz) can cherry pie filling (see note)

Grease a 9” spring form bundt pan. Beat butter till creamy, add sugar and beat until fluffy. Add eggs, one at a time, add extracts and sour cream, mix well. Add dry ingredients and beat until smooth. Spread half of batter into prepared pan. Top with half of pie filling (see important note below) and half of the almonds. Spoon remaining batter into pan and spread out. Top with the remaining pie filling and almonds.

Bake at 350° preheated oven for 45-60 minutes (my oven takes 52 minutes). Test with toothpick to make sure its done. Sprinkle with powdered sugar or drizzle with a vanilla glaze.

NOTE: Recipe says to use a whole can of pie filling, but I use the whole cherries in the pie filling and only about ¾ of the “goo”.

CRACKED WHEAT VEGETABLE BRIYANI

With the New Year creeping on us, (I still cant believe we are into New Year already), hubby and I have started on a weight-loss plan. We are trying to lose the weight that we have gained after having the babies. The first two years with our babies, we could not think of going to the gym or anything else except caring for the babies. Now that the babies are a little grown up, we have started taking turns to go the gym or go for walks with the kids. We are also trying to cut down our rice intake and including more oats and other wheat in our diet. This recipe came in ideal when we were not in the mood for chapathis one day and this was a hit at my place., so here is my first recipe for 2013, hoping to post more in the future.

Ingredients:
Cracked wheat, 1 cup. (I have used the bigger variety here. This gives a good texture to the dish. Bulgur wheat can also be used here).
Sliced onions, 1 cup.
Chopped tomatoes, ½ cup.
Green chilies 1-2.
Ginger-garlic paste. 1 tablespoon.
Mint leaves, a handful.
Chopped cilantro, 1 tablespoon.
Briyani masala, 1 tablespoon (OR) 1 teaspoon of fennel seeds, 2 cardamom pods, 2 cloves, 2 small cinnamon sticks, 2 bayleaves, 1 star anise.
Chili powder, 1 teaspoon.
Chopped vegetables like green beans, carrots, cauliflower etc all coming around 1 cup. I have pre-cut freezer veggies.
Green peas, a handful.
Ghee 1 tablespoon.

Preparation
Heat a pan with a tablespoon of oil. When the oil is hot, add the seasonings given under briyani masala and fry for a few seconds. Then add the sliced onions and saute for a few minutes until the onions are tender. Now add the chopped tomatoes, green chilies, ginger-garlic paste, chili powder, and salt and keep sauteeing for a couple of minutes until everything is well blended. Now add the vegetables, green peas, and soya nuggets along with the cracked wheat and mix everything well. Transfer the contents to a rice cooker. Add 2 cups of water along with the ghee and mint leaves and cook the briyani until done. Garnish with chopped cilantro and serve hot with raita.

Alternatively cook the briyani in the pressure cooker for 3 whistles up to 10 minutes just like for cooking rice.

This briyani can also be done under stove top. After adding the water, cook closed under low flame until the dish turns dry until the cracked wheat and veggies turn soft.

These are the recipes that I prepared for get-together and potlucks for the New Year. For the potluck at my hubbys office I had prepared bisibelebath and soya kothu curry (recipe coming soon). We also had a get-together at my friends place and I prepared vegetable briyani and black channa curry. I also prepared some chicken nuggets and fish sticks for the kids  just in case they dont want to eat anything :)
