TwoFaced Tuesday Contd Heart of Palm Hummus or Faux mmus

There are two things Im out of my mind obsessed with right now: HBOs Girls (and subsequently everything about Lena Dunhum) and this hummus made out of heart of palm.
I told you last week that I was damn near convinced heart of palm would make a tremendous substitute for chickpeas in a hummus recipe. In my ongoing research for the chapter "Bitches Love Dip" in the inevitable Paleo cookbook that Jenna and I will produce (hello, publishers!!!), it was just a matter of time before I actually got after this endeavor. 
When you first explain Paleo to someone, in particular the part where you cant eat beans, which consequently means hummus, which is basically its own food group for most girls, a typical reaction goes something like this:

"Okay, what the hell is WRONG with beans??? Theyre good for you!! And omfg, I will NOT give up hummus. Youre a TFI." (Editors note: TFI = Total Fucking Idiot. Im trying to make this happen. Help a sista out.)
The truth is, I STILL dont know why beans arent paleo, I just know that they arent. But what the eff ever! You dont even need them anymore, because heart of palm does exactly what I thought it would and purees down into the very same creamy texture a chickpea does.
And regardless of whether youre into Paleo, heart of palm has 2/3 less calories than chickpeas. Eh?? Ehhhh???
I mean, if theres one thing girls universally care about, its cutting calories. I mean, just ask Lena Dunham.

Heart of Palm Hummus (or Faux-mmus)
Makes about 1.5 cups

  • 1 14 oz. can heart of palm, drained
  • 3 Tbsp. tahini
  • 2-4 Tbsp. olive oil
  • 1 large clove garlic
  • 1 tsp. fresh lemon juice
  • salt and pepper
Put all ingredients in a food processor. Blend until desired consistency is reached. Add more olive oil if hummus seems to thick. Serve with carrots, sliced cucumber, or pork rinds.

Apple sweet heart


Ingredients for short crust
  • Flour 10 ounces
  • Butter 6 ounces
  • Egg 1
  • Icing sugar 3 ounces
  • Baking powder 1 tsp
Ingredients for filling
  • Apples ½ kg
  • Sugar 75 gm
  • Water ½ cup
  • Cinnamon powder ½ tsp
Method for filling
  • Peel and slice apples. In a saucepan put sugar, apples, water, cinnamon, and cook for 10 minutes.When the water nearly dries add 1 tsp corn flour and remove.
Method for short crust
  • In a bowl beat butter and icing sugar. Beat in the eggs and fold in sieved flour and baking powder.Form into a dough and keep in the fridge for 30 minutes.Now divide the dough into two portions. 
  • Roll one into 14 inch thick round, put it in a 8 inch pie plate, put the apple filling, roll the second half of dough, cover the top of apples and brush top with a beaten egg.
  • Decorate as required, sprinkle with 2 tbsp granulated sugar, bake at 190 degree C for 25 to 30 minutes, serve apples sweet heart with vanilla ice-cream or whipped fresh cream.

The Crazy Basil Peach Black Pepper Parmigiano Reggiano Cobbler that Captured My Heart

This unusual basil, peach, black pepper, Parmesan cobbler recipe started out as an innocent experiment making individual-sized cobblers, but somehow spun out of control into weird and wonderful new directions.

I was thinking about a cheese Danish, so I grated some Parmigiano-Reggiano into the batter. I was thinking about Gougères, so I added some freshly ground black pepper as well. I was thinking about a peach and basil sorbet I had one time, and decided that some of the sweet aromatic herb seemed perfectly appropriate.

The result was one of the more interesting and delicious desserts I’ve eaten in a long time. The flavors are subtle, but identifiable. I love, love, loved it. It may sound a little savory, but it was plenty sweet enough, and would make a memorable end to any late summer meal. I hope you give it a try soon. Enjoy!

Note Regarding Self-Rising Flour: As we said in the regular peach cobbler post, it is recommended you go out and get some self-rising flour. You can make it yourself, by adding baking powder and salt to all-purpose flour, but for whatever reason, it just doesnt seem work as well.



Ingredients:
Two 10-oz ramekins with 2 tsp melted butter in each
For the batter:
1/2 cup sugar
2/3 cup self-rising flour
2/3 cup milk
1 tbsp finely grated Parmigiano-Reggiano
pinch of black pepper
For the peaches:
1 large peach, peeled, pitted, sliced into 10-12 slices
2 tbsp sugar
2-3 torn or sliced basil leaves
1/2 tsp balsamic vinegar
1 tsp water
