Green spice biryani


Ingredients
  • Chicken 1/2kg
  • Rice 300g
  • Yogurt 250g
  • Onions 2
  • Whole garam masala as required
  • Green chilies 6-8
  • Coriander powder 1tsp
  • Cumin powder 1tsp
  • Red chili powder 1tsp
  • Crushed red chilies 1tsp
  • Coriander ½ bunch
  • Mint leaves ½ bunch
  • Yellow food color a pinch
  • Salt as required
  • Ginger garlic paste 1tbsp
  • Nutmeg and mace powder 1/2tsp
  • Capsicum 1
Method:-
  • Fry the chopped onions until they turn dark brown in color.Remove some of the onions and place on an absorbent paper.In the remaining onions add the chicken along with the ginger garlic paste and fry until the color of the chicken changes.Add 1cup water as and salt as required. Cover and allow to cook.In a blender blend together 6-8 green chilies,1 capsicum,1/2 bunch coriander and ½ bunch mint leaves. Add a little water and blend into a paste.After 8-10 minutes uncover the chicken and add the whole garam masala , 1tsp coriander powder,1tsp cumin powder,1tsp chili powdr,1tsp crushed red chili powder and salt as required.Pour the blended green masala , fry for a few minutes and turn the flame off.
  • Boil the rice. For this take a BIG vessel (deep and wide), put lots of water in it, tip in the soaked rice along You have to par cook the rice (meaning 3/4 cooked and rest will get cooked later). Now strain the rice.Use a deep heavy bottom pan with a lid. First spread some desi ghee at the bottom of the pan.Second a layer of rice, followed by a layer of chicken and lastly by a layer of rice.Sprinkle 1/2tsp nutmeg and mace, brown onions and a pinch of yellow food color.Cover and simmer for 10-12 minutes. Spoon the biryani out on a warm serving plate.
