SANDRAS JAPANESE RESTAURANT STYLE SALAD and DRESSING

This light and flavorful salad n dressing tastes very similar to major Japanese
chain restaurants and pairs stupendously with Asian main dishes...


Prep: 15 Mins.
Servings: (6 to 8)

INGREDIENTS:

Dressing (Yields 1-1/2 cups):
1/2 cup finely chopped sweet white onion
1/2 cup canola oil
2 tablespoons water
2 teaspoons ground ginger (or 2 tablespoons freshly grated)
2 tablespoons minced celery
3 tablespoons ketchup
1/4 cup low-sodium soy sauce
2 tablespoons honey
2 teaspoons freshly squeezed lemon juice
1/2 teaspoon granulated garlic
1/2 teaspoon fine-grain sea salt
1/2 teaspoon freshly ground black pepper

Sandras Restaurant-Style Japanese Salad Dressing

Salad:
1 bunch heart of romaine, sliced into 2-1/2" x 1/4" strips
1 carrot, shredded
3 celery ribs, thinly sliced on the diagonal



Garnish:
--Toasted sesame seeds

METHOD:

Add all dressing ingredients in order listed in blender.  Place lid on top, and blend on high speed for a minimum of 30 seconds, until dressing is smooth. Let dressing stand a minimum of 4 hours in refrigerator for flavors to meld before serving.

Add all salad ingredients to a medium glass bowl, and toss to combine. (I like to place the salad in the refrigerator for about 15 minutes to ensure it is cold prior to serving.)

When preparing individual servings of salad, top each with a light drizzle of dressing and a sprinkling of sesame seeds. ~ Enjoy!

Restaurant Style Chicken Curry Recipe

Ingredients for Jeenas Restaurant Style Chicken Curry Recipe
6 Skinless and Bonesless Chicken Thigh Pieces
1 Large Onion (chopped)
approx 1 Inch Fresh Ginger (chopped)
3 Garlic Cloves (chopped)
4-5 Tomatoes (diced small)
Rapeseed Oil
1 tsp Turmeric
2 tsp Coriander Powder
1 + 1/2 tsp Cumin Powder
1 + 1/4 tsp Chilli Powder
1 tsp Paprika
1 tsp Salt (optional)
1 tsp Garam Masala
Fresh Coriander Leaves

How to make restaurant style chicken curry


Take a large pan/wok and generously pour in some rapeseed oil.

Blend/grind together the onion, garlic and ginger into a paste.

Add the paste to the pan and cook on a medium heat for a few minutes stiring frequently.



Add the coriander, cumin, chilli and turmeric powder to the pan, stir well.



Add the chopped tomatoes and stir.

Simmer for at least ten minutes remembering to stir in between.



Add the paprika.



Add the chicken pieces, gently stir into the curry and simmer for at least 30-40 minutes or until the chicken is cooked through.

Remember to stir frequently.



Add garam masala and salt stir well then add the mushrooms.



Once mushrooms are cooked add fresh coriander leaves to the chicken curry.

Turkey curry recipe In Indian Style


Turkey is very simple and easy recipe to cook, as it is available in grounded form. Before marriage my hubby said that he used to get this turkey very often, because it is easy to cook and tastes almost like a normal chicken. He says that it is the quick and easy recipe for a lazy bachelors. But he used to prepare in a different way, I prepared it in my own version he liked it a lot. 

Ingredients:
chili powder---1ts
coriander powder--1& 1/2ts
Cumin powder- 1 & 1/2ts
Til/Sesame/nuvvulu- 2ts dry roasted
gasagasalu/white poppy seeds-1ts(kus khus)
poppy seeds
Dry coconut powder-2ts
Whole garam masala (Cloves 4 + Cinnamon stick 1big + cardamom 3)
Ginger garlic paste-2ts
Salt to taste
Onions chopped half cup
tomato puree-1/2 cup
Olive oil/ vegetable oil-3ts

Masala preparation:
  • Roast Whole garam masala (Cloves 4 + Cinnamon stick 1big + cardamom 3) in a fry pan.Take This roasted garam masala in a grinder jar along with 2ts of coriander powder + cumin powder+ 3ts of til/sesame/nuvvulu + Coconut powder 1ts and grind the mixture to a fine powder.
DIrections
  • Remove turkey from freezer, and let it come down to room temperature.
  • Now take a pan and heat 3-4 ts of butter/ ghee/ olive oil/ vegetable oil and add sajeera/black cumin and saute it.
  • Now add onions and saute till they are half cooked under medium flame.
  • Add turmeric, ginger garlic paste and cook until raw flavor goes away.
  • Add turkey and close the lid for few minutes, now open the lid and with the help of spatula/spoon smash the turkey to little pieces.
  • Add little salt and cook by closing the pan  under medium flame. 
  • Let this mixture cook for at least 30min under medium flame, by giving stirs for every 5min.
  • when the turkey is completely cooked add tomato puree and cook till its raw flavor vanishes.
  • Add the prepared masala and mix well, adjust salt. Cook for few more minutes by closing the lid.
  • Now the turkey is ready to serve. Do not add water, it will spoil the taste of turkey. 
  • The curry is ready to serve. Enjoy this with Bagara/ white rice.

Gluten-Free Pizza Crust, Goddess Style

For years I've missed pizza. Not because there isn't gluten-free pizza available. It's out there. You can find it if you look hard enough. Take a gander in the frozen food aisle of your favorite natural market. Snoop around in the dairy case, next to the gluten-free bagels. You might even hit pay dirt at your local pizza joint (if they understand the ins and outs of cross contamination). So yeah. There are some choices out there.

Problem is, most gluten-free pizza sucks.

It's usually heavy on the chewy aspect. Or dry as dirt. With zero flavor. Yawningly bland. Certainly nothing to brag about. I mean, you wouldn't eat it if you didn't have to. You know what I'm sayin'? It's okay in a pinch. If you're famished on a Friday night. But it's not exactly inspiring.

And it's not from lack of trying, this pizza deprivation.

I've been rustling up g-free versions our nation's most cherished Italian import since week one of going gluten-free twelve years ago. I've made pizza crust from cookbooks (bready and yeasty). I've tried gluten-free mixes (and tortured my loyal little body with bean flour bloat). I've rolled out yeast-free biscuit dough (not bad, actually, but not real pizza). I've topped Italian style flatbread with roasted vegetables. I tried the whole Chebe thing (gum city). While some attempts proved passable, they never hit that elusive sweet spot. They failed to quell the longing. I used to make my own pizza dough, you see, before I discovered I harbored a faulty gene predisposing me to celiac disease. I was never a frozen pizza kind of gal.

I used to knead pillows of dough on my antique bread board, humming along to Crowded House. Ignorance was bliss. For awhile. And Friday night was always homemade Pizza Night.

So I've been a tad bereft on pizza-deprived Fridays.

But last week I started experimenting with a gluten-free dinner roll recipe. And as I tore a warm roll in half, golden and crusty and tender in the middle, it hit me.

This would make a fabulous pizza crust! I murmured to my husband through a mouthful of fresh baked loveliness. I tore him off a piece. He munched. And nodded.

So I tweaked and baked.

And lo and behold. A new gluten-free pizza crust was born.

And this one doesn't suck.

Vegan Take Away Style Curry Recipe


My vegan take away style curry recipe tasted so good that when I returned to the kitchen after finishing eating my share of it - I caught my hubby red handed scraping every last morsel of curry from the pan like there was no tomorrow!

I use a lot of Indian herbs in this recipe which gives it a very authentic Indian flavour. I also use my carrot and parsnip soup not only as a base which flavours the curry but the soup gives the curry a texture of perfection. Stay tuned for my carrot and parsnip soup recipe coming very soon.

You could call this recipe a pea and mushroom curry recipe but when we were eating it tasted so like we had just brought it in as treat from a fabulous take away.




Ingredients for Vegan Take Away Style Curry

1 + 1/2 Cup of frozen peas
1 large Red sweet pointed red pepper (chopped)
1 small Onion (sliced)
Tbsp Carrot and Parsnip Soup
3-4 Tbsp Water
Salt to season
3 large Portobella Mushrooms (chopped)
Pinch Dried coriander leaves
1 heaped tsp Freshly grated ginger
1 large Garlic (minced)
1 tsp Dried shredded coconut
2 Small green chillies (chopped)
2 Medium red chillies (chopped)
Rice bran oil

For the Spices
Pinch Fennel seeds
1/2 tsp Turmeric
1/2 tsp Paprika
1/4 tsp Cumin seeds
1 + 1/2 tsp Chef Jeenas Mild curry powder
3 tsp Dried methi leaves
Large pinch Dried curry leaves

How to make a Vegan Take Away Style Curry



Place fennel, turmeric, cumin seeds, paprika, mild curry powder, methi leaves and curry leaves into a grind and grind into a powder.


Using some rice bran oil cook the onions for a few minutes on a medium heat stiring frequently.

Add the red peppers, chillies, garlic and ginger.

Cook for a few minutes stiring all the time.



Sprinkle the curry spice powder all over the pan of vegetables then lightly drizzle a little rice bran oil on top of the spices.



You want the vegetables and spice powder to be lightly coated with the rice bran oil - not soaked or covered in oil.



Add the 5-6 tablespoons of carrot and parsnip soup.



Add 2-3 tablespoons of water and simmer on the lowest heat for 10 minutes.



Add the tsp of shredded coconut, pinch of salt (optional) and frozen peas.

Cook on low for another 10 minutes.



Add the mushrooms and simmer until cooked.

You may need to add another 1-2 tablespoons of water but make sure you do not add too much water or else the take away curry will turn into more of a watery stew.



Serve this tasty vegan take away style curry recipe with freshly cooked basmati rice and yogurt.
