Paneer Biryani


Paneer Biryani Recipe
Ingredients
Basmati rice - 1 and 1/2 cups
Paneer / Indian cottage cheese - 300 gms
Onion sliced - 2 nos
Green chilli slit - 2 nos
Tomato chopped - 1 no
Ginger & garlic paste - 2 tbsp
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Garam masala powder - 1 tsp
Mint leaves chopped - 1 cup
Coriander leaves chopped - 1/2 cup
Cumin seeds / Shahi jeera - 1 tsp
Cinnamon stick - 2" piece
Cashew nuts - 10 pieces
Water - 2 cups
Salt to taste
Oil - 2 tbsp
Ghee - 1 tsp

Paneer Biryani
Method
1. Chop the paneer into cubes and soak it in hot water for 10 mins.
2. Wash the basmati rice and soak it in 2 cups water.
3. Heat 2 tbsp oil in a pan, add cashew nuts and fry until golden brown, drain nuts from oil and set aside.
4. To the same oil add cumin seeds and cinnamon stick, let the cumin splutter.
5. Add the sliced onions and green chillies to the pan, sauté until onions are soft.
6. Add the ginger & garlic paste to the pan and sauté until raw smell leaves.
7. Now add the chopped mint leaves, sauté for a minute and add chopped tomatoes to the pan, cook until tomatoes are soft.
8. Next add red chilli powder, turmeric powder, garam masala powder and salt to the pan, sauté for
few seconds.
9. Add the soaked and drained paneer pieces to the pan and stir well until the masalas are coated on
the paneer.
10. Add the basmati rice along with the water in which it was soaked to the pan, bring to boil.
11. Once water starts boiling, gently stir well the rice and cook for few minutes until 3/4th of
the water is absorbed by the rice.
12. Cover the pan with lid, simmer and cook biryani for 10 mins on low heat.
13. Finally garnish paneer biryani with chopped coriander leaves, fried cashew nuts and 1 tsp
ghee.

Paneer Bhurji Paneer Recipes


Paneer Bhurji
Ingredients
Paneer-250 gms( crumbled)
Onion medium minced-2 nos
Tomato medium finely chopped-1 no
Green chilly minced-3 nos(+/- to taste)
Ginger minced-1/2" piece
Cumin seeds-1 tsp
Coriander leaves chopped-few tbsp
Garam masala-1 tsp( optional)
Salt to taste
Oil-2 tsp

Paneer Side Dish
Method
Heat oil in a pan when hot add cumin seeds and allow to crackle. Add onion, green chilly and ginger, saute for few minutes. Add paneer and tomato, season with garam masala and required salt. Mix everything and cook well until dry. Finally add chopped coriander and serve hot paneer bhurji with pulkas, roti or with toasted bread.

350th post celebrating with Palak Paneer easy recipe

This is my 350th post, is there any better food in the world that makes me happy and brings me to a  celebration mood other than Palak Paneer? the answer is no. Palak paneer or saag paneer is a very comforting food that everyone loves it. I always prepare this curry by pureeing the boiled spinach, but this time I made it in a qucik, easy and nutritious way. So, this is my yummy 350th post with easy, quick and healthy recipe of paneer saag (Palak/Spinach).



Ingredinets:
Spinach-washed and chopped fine-3cups
Tomato puree-1/2cup
Green chili-1
Onion-finely chopped-1/2cup
oil-1tbsp
cumin seeds-1/2tbsp
mustard seeds-1/2tbsp
Red chili-1
Cumin powder-1tbsp
coriander powder-1tbsp
garam masala-1/4tbsp (to taste)
Red chili powder-1/2tbsp (to taste)
Turmeric-pinch
salt to taste
Panner-100grms- chopped to large cubes

Method
Heat oil in a pan and add mustard seeds, cumin seeds and allow them to splatter. Later add green chili, onion and cook them till they turn golden brown. Now add turmeric, garlic paste and cook till raw flavor of garlic goes away. Then add spinach and close the pan with a lid and cook under medium flame for 5min. Later add tomato puree, mix well and cook until raw flavor of tomato is gone and spinach is done. Add in the spice powders: cumin powder, coriander powder, garam masala, red chili powder and mix well. Add salt and adjust to taste.  Finally add the paneer cubes and mix well. Cook for 2min and turnoff the stove and enjoy with naan or rice. I suggest having it with garlic naan, it tastes wonderful and it is always my favorite combination.

Palak Paneer

Ingredients:
1.      2 cups spinach (palak)
2.      8 to 10 paneer pieces in cube (Indian cottage cheese)
3.      3 tablespoon oil
4.      1/2 cup onion paste
5.      3/4 cup tomato puree
6.      1/2 teaspoon ginger paste
7.      1 teaspoon green chili paste
8.      1/2 teaspoon  coriander powder
9.      1/2 teaspoon red chili powder
10.  1/2 teaspoon garam masala
11.  1 teaspoon lemon juice
12.  Salt to taste           
Method:
1.      Wash and blanch the spinach leaves in vessel full of salted boiling water.
2.      Drain, wash with cold water and blend in a mixer to a smooth puree.
3.      Heat the oil in pan and fry the cubed paneer until light golden brown than remove.
4.      In the same pan add onion paste and sauté till turn translucent.
5.      Add ginger, green chili and sauté for 1 minute.
6.      Add tomato puree sauté and cook till the mixture leaves oil while stirring continuously.
7.      Now add garam masala, red chilli powder, coriander powder and salt than cook for 1 minute.
8.      Now add palak (spinach) puree and cook for 2 to 3 minutes than add paneer and lime juice and simmer till the gravy thickens a little.Serve hot with Naan, Roti or Paratha.
