Paul Hollywoods Chocolate Muffins

In order to prevent overdosing on chocolate birthday cake,  I suggested to Mr Farmer that we had chocolate muffins for this birthday rather than a 7" or 8" cake!  He was quite happy to go with this, especially when I found this recipe by Paul Hollywood on the UKTV Good Food Channel.

It is a really interesting recipe, it uses strong bread flour and after you make the mixture you chill it in the fridge for 2 hours.  Then you put a teaspoonful in the bottom of the muffin case add a square of dark chocolate and then more muffin mixture on top. 

The muffins are very moist and and airy. When served warm, the chocolate in the middle is gooey and melting.  If cold then it doesnt go completely hard again, just not so gooey. 


I can really recommend this recipe, it is high fat, high sugar and absolutely delicious, so most of the rest of the muffins are destined for Mr Farmers office to remove them from temptation!

Too Many Blueberry Muffins

Give or take a pinch of baking powder, most blueberry muffin recipes are pretty much the same. One thing that varies is the dairy used – some recipes call for buttermilk, while others use yogurt, or sour cream as this one does.

When it comes to the amount of blueberries, it seems that 1 1/2 cups is the standard measure. Since I get my blueberries in pint baskets, which is 2 cups, I decided to push the envelope and toss in the whole thing.

Is that too many? You can be the judge, but I really like that these are chock full of juicy fruit, and while it does make them less sweet, I think its a good tradeoff. This recipe is going to be published, so let me know what you think if you decide to give them a go.

I usually do my voiceovers in the morning, when Im fresh and peppy, and my voice is dripping with enthusiastic verve. This voiceover was done late in the evening, as I was getting ready to take off to Las Vegas (where this is being posted from).

If you are new to the blog you probably wouldnt have noticed anything, but the regular viewers will hear the same thing I do…I sound really tired. Anyway, maybe Im being a bit self-conscience, but I thought it was really noticeable, and a good reminder to make sure I do these soundtracks before a long day of production. Notwithstanding the sleepy narration, I like these blueberry muffins a lot, and hope you give them a try. Enjoy!



Ingredients for about 16 muffins:
3 cups all-purpose flour
3/4 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
1 cup white granulated sugar
1 (1/2 cup) stick butter, softened
finely grated zest from one lemon
2 tablespoons vegetable oil
2 large eggs
1 cup sour cream
1/2 cup milk
1/2 teaspoon lemon extract, optional
2 cups fresh blueberries

Healthy Apple Muffins

Usually I love to bake in weekends especially on Sundays as I spend relaxing day and also get time to experiment new recipes.

I and my husband never touch apples in the refrigerator; I thought why not use them in my baking. So made these apple muffins which came out so perfect. 



These Healthy apple muffins are very moist, slightly sweet and have a wonderful homey taste of cinnamon.

Healthy Muffins for a Healthy Breakfast!!!

Ingredients:

For 12 Muffins

Green Apple -1 no
All Purpose Flour – 2 cups
Sugar – 1 cup
Unsalted Butter – 6-7 tsps
Milk – ½ cup
Vanilla Extract – 2 tsps
Baking Powder – 2 tsps
Eggs -2 no
Salt a pinch
Cinnamon powder – 2 tsps

Preparation

  • In a small bowl take baking powder and salt and mix well.
  • Add melted unsalted butter, sugar and beat for few minutes until light and fluffy.
  • Add the eggs and mix well. 
  • Now add milk, vanilla extract, cinnamon powder mix well.  
  • Add flour to the batter and mix well until fluffy.
  • Fold in chopped apple. 
  • Preheat oven to 350 degrees. 

  • Put paper liners in 12 muffin tins and fill them to ¾ with batter
  • Bake for 25-27 minutes, or until a toothpick inserted in the center of a muffin comes out clean. 
  • Transfer muffins and let them cool.
